Tokat Barbunyası is a barbunya (equivalent of pinto in Turkish context) type Turkish bean that my mom looks forward to cook with in late summer/early fall to make her famous pilaki.
Tall plants of Tokat Barbunyası produce an abundance of red striped bean pods with large seeds that have cream-colored seed coat and dark red stripes. This dry bean has outstanding flavor and cooks quickly, a trait that we know our Turkish friends are on the lookout for.
