Chervil is a fern-like herb with a mild anise flavor that elevates many dishes from fried eggs to salads to fish dishes. Leaves resemble those of carrots and are best when added at the end of cooking. Loses potency when dried or cooked too long. Brussels Winter is one of the most popularly grown commercial chervil varieties.
