Mid-season, intermediary to long day. Burgaz Purple is a beautiful “red” bulb onion from Turkey. Mid-size, firm bulbs have tear-drop to round shape and reddish purple skin. Does well in storage from 4-6 months.
This variety has incredible sweet flavor that is perfect to eat fresh with a pinch of salt next to hot meals such as bean stew. Traditionally known as a “fish onion” in Turkey since it compliments grilled or fried fish amazingly well. Burgaz Purple is especially known as the staple accompaniment to lakerda, which is a fermented fish recipe made from Black Sea bonito, cherished by all communities of Istanbul, oftentimes associated with Greek and Jewish communities.
