Pale yellow fruits of Spaghetti squash store well after harvest and can be eaten later in the fall and winter. Once cooked, flesh breaks into spaghetti-like strands and can be scooped with a spoon. Mix with cheese and black beans when hot, and serve with your favorite sauce. Carb friendly, delicious and productive. Known to be originally from Japan.
