Antalya’s famous Çandır bean is traditionally used to make pilaki in the region. In this specific pilaki, Çandır seeds are boiled and drained to mix with lemon, olive oil, sliced onion, eggs and tahini. This is a flavorful, mid-season bean. Harvest the seeds when the pods are dry.
